They are similar molecules which occur naturally and artificially and are used to keep foods fresh and free of bacteria.Nitrites and nitrates can be found naturally in greens like broccoli and cucumber, but also artificially in deli meats, bacon, and hot dogs. Eating processed meats with nitrites and nitrates may increase one’s risk for rectal cancer (some evidence suggests they could also be linked with stomach cancer).1
